Quinoa and Black Bean Salad
Ingredients
1/3 [2.7 oz] cup fresh lime juice
1 Tbsp ground cumin
1 Tbsp sea salt
1/3 [2.7 oz] cup olive oil
(2) 15oz cans black beans, drained, rinsed
4 1/2 tsp red wine vinegar
4 cups water
2 cups [16 oz] dry quinoa, rinsed -1 each medium red|orange|yellow bell pepper, finely chopped
1 (10 oz) bag frozen corn, thawed
1 bunch cilantro, finely chopped
